Australian-born Mark Haisma made his name as a négociant and micro-producer in Burgundy after years at Yarra Yering, Victoria. Now based in Gevrey-Chambertin, he sources fruit from trusted growers and produces wines of precision and authenticity, guided by minimal intervention and sustainable farming. Haisma’s collaborative approach and transparent winemaking have earned him cult status among Burgundy insiders. Sustainably produced; vegan-friendly. His Mâcon Chardonnay 2022 is a pale gold colour with aromas of white peach, green apple and a touch of lemon curd. The palate is crisp yet supple, with juicy orchard fruit, a hint of almond and a saline mineral edge. Gentle lees texture adds weight without oak dominance (8 months in old barrels), leading to a clean, balanced finish. A refined, modern expression of southern Burgundy and one best paired with shellfish or soft cheeses.
